Homemade Oreos, soooo yummy!

This recipe is so simple and great to bring to a party or just to enjoy at home. People gluten free or not LOVE these!

Kitchen Oreo

Homemade Oreos:

2 boxes of Betty Crocker Gluten Free Devil Food Cake Mix
1 1/2 cups of Crisco
4 Eggs
Combined all ingredients together and mix until well blended. Roll dough into little balls (about the size of a quarter) and place on cookie sheet. Bake at 400 degrees for 7-8 minutes. Let cool.

Filling:
3 cups powder sugar
4oz soften cream cheese (Philadelphia Cream Cheese is gluten free)
2 tbsp milk
1 tsp vanilla (McCormick's, Kirkland Brand, Flavorganics, Simply Organic are all gluten free vanilla extracts!)
1/2 cup butter (melted)*
Combine all ingredients and beat well. It's always fun to use a little food coloring** in the filling to make these a festive treat!
After the cookies have cooled, put the filling into the middle of the two cookies and squish together until you have an Oreo! Repeat and enjoy!

*Natural butter is gluten free. Be careful of light butters and margarine as these may contain gluten.

There are a couple different gluten free chicken nuggets to choose from, and a very popular main stream product that makes gluten free french fries! The ice cream sandwiches were a nice finish to our meal last night so I thought I'd include them in this post.

Applegate Farms is a great company and makes an awesome product. Gluten free chicken nuggets! These chicken nuggets are better tasting and even healthier than regular gluten filled chicken nuggets. They're company states they are organic, no antibiotics are used, no nitrites or nitrates added, humanely raised, minimally processed, no artificial ingredients and they are gluten, dairy, and casein free. And very very good! You will not miss the gluten with these baby's! You can find these chicken nuggets at GF Joe's, and Fred Meyers for sure. Good ol' spaghetti!

So I figured I'd start with something very simple. Spaghetti. So when I first went gluten free I thought I'd never get to enjoy spaghetti or garlic bread ever again! Well I was wrong. Gluten free spaghetti is actually very easy to make and very yummy. The first time I made gluten free spaghetti it was all from scratch. Fresh blended tomato sauce, fresh herbs, minced garlic, the whole nine yards. Needless to say about three hours later, a very messy kitchen and complete utter exhaustion, it was finished. It was good but to me it was a total failure. Why? Because I didn't want to spend three hours in the kitchen every time I wanted spaghetti.  I was frustrated and I missed my old way of making spaghetti. Thank goodness it's not that difficult. There are a lot of twist the top sauces to choose from, and many are main stream products. Even though I use jarred sauce I spice it up to my taste. If you love to cook from scratch, that is great. It is even healthier. But if you are like a lot of us, your on a tight schedule and need something fast.
Good ol' spaghetti is just as quick gluten free and really tasty!

    Gluten Free Living!

Welcome and thank you so much for visiting my blog! "A Different Kind Of Life" is a place where I can share my wonderful discoveries in the gluten free world, in hopes of making your gluten free journey a little bit easier! Since I was diagnosed with Celiac Disease a little over three years ago, I have been 100% gluten free and on a mission to eat as "normal" as possible. In the process Google has become my best friend and I found a ton of exciting gluten free treasures. It is still a learning process but one that is very rewarding. The overall awareness of  Celiac Disease and gluten sensitivities has increased to the point that it is easier than ever to be gluten free. But that being said, it is still hard on those who do have this intolerance, or any intolerance, and therefore can make life a little challenging and down right depressing at times.
I know in the beginning it feels completely overwhelming, frustrating, and you will want to give up hundreds of times. But don't. It does get easier and there are so many options available to us it will amaze you! The key is to keep an open mind. The gluten free world is a wonderful place to discover and the best part is you will continue to feel better day after day. In the day of electronics, the Internet and down loadable apps, you will find a ton of resources to help you.
My mission is to share all the latest and greatest gluten free finds here on this blog and help you discover the joys of gluten free living. It is such a great rush of excitement when I find a new restaurant to eat at or a new gluten free item that I've been missing for years! I hope that you will join in my celebrations and start living the gluten free life style with enthusiasm and happiness! Cheers to "A Different Kind Of Life"!
